Glasses of Cheese
WITH BISCUIT, CHOCOLATE AND PEACH

INGREDIENTS
- 6 dry biscuits (70 gr) of Sancho Panza Egg biscuits
- 25 gr of melted butter
- 250 gr of mascarpone (1 tub)
- 2 chocolate custard (240 gr)
- 1 can Peach in Mild Syrup (240 gr)
- 1 Tbsp flanin (or flan preparation)
- 200 ml milk

DIRECTIONS
Crush the biscuits until they are crumbly, mix them with the melted butter until they have a homogeneous consistency. Distribute in the 4 glasses where the dessert will be presented. Put them in the fridge. In a bowl mix the mascarpone with the custard, with energy and rods, Using a mixer is not advisable because the cheese is very delicate and can become liquefied. But if you want to use a mixer, do it softly. Set it aside for later.
In peach cans there are usually about 8-10 halves, one must be left for decoration, the rest shall be cut into cubes and the juice must be set aside.
Now prepare some custard, first dissolve the flanin in the juice of the peach, and put the milk in a saucepan to heat, when it starts boiling, pour the mixture and stir until it thickens. Pass it to a mixer glass and let it cool a little.
Take the glasses with the biscuit base, cover them with the cheese and chocolate cream, then place the cubes of peach all over the surface. Those that are left over shall be added to the mixer glass with the cream , beat everything, so that any remaining lump is eliminated and the peach is crushed into it.
Distribute these “custard” over the peach cubes and put it into the fridge.
